Taking the massive leap of faith into retirement in our early 50's. Living on 1/3 of our old income, reducing our spending but still living a full and happy life, just being more resourceful! Spending quality time with family but not giving away our precious time too freely so that there's none left to explore new hobbies and interests. Setting time aside for relaxation and well being. Trying new adventures and making precious memories.

Make what you fancy
Evening everyone, hope you're all safe and well.
I don't know about you but I am a creature of habit. I have porridge and a banana almost every day for my breakfast. If we are on holiday I enjoy a cooked breakfast but wouldn't ever think of cooking one at home.
Well today that changed. I always have my shopping delivered on a Tuesday and so had just enough milk left for breakfast as the shopping arrives at 10. I don't know what made me check but when I did i was very disappointed because the shopping is coming tomorrow!
As I can't go to the supermarket to get any, and, I certainly wouldn't dare to use it all and have none left for my much loved cups of tea, I had no choice but to have something else for breakfast.
I know, I thought, I will have some jam on toast. Oh no, that wasn't an option as there wasn't a slice of bread left. What a sorry state of affairs. We never run out of bread and milk usually and now I was craving toast and Jam. You know how it is when you get something into your head and just cant stop thinking about it. So, out came the mixing bowl and the ingredients and I set about making a loaf of bread.
This is by no means a quick job but two hours later, with the help of a makeshift dutch oven, I had a brown loaf. I couldn't wait for it to cool so sliced the end off and gave it to hubby and then I had the next slice. No butter, just some lovely strawberry jam.
In these unprecedented times, we just have to make do with what we have and be resourceful.
It's surprising what we can do if we put our minds to it. Where there's a will there's a way and all that.
Have you been baking during lock down? Have you made anything that you've not made before or had to swap ingredients around because you couldn't get them?
Until tomorrow, stay safe
Jules x

We bake our own and you can’t beat it, but the smell of the bread baking whilst you waited for breakfast- I can only imagine. Take care.
ReplyDeleteHi Caree. My husband said he could smell it baking from the garden. It does smell nice. I've only baked a few loaves of bread, I usually bake cakes, so i'd welcome any recipes or tips. Take care
ReplyDeleteWe’ve been experimenting with and enjoying the No Knead recipes based on Doris Grant’s loaf, like this one in Delia Smith’s Complete Cookery course

Thanks for that. I've looked at it and it does seem a much easier recipe than the one I used which had milk in. I will give it a go. Do you use the same recipe for a white loaf?
DeleteNot sure, haven’t come across a white loaf recipe that doesn’t require some kneading
