I am loving life and fully intend to make the most of it making some fantastic memories along the way. Family and friends are very important to me and I enjoy spending time with them. Quick Suppers
Evening Everyone.
I've been to my daughter's house today helping her to make wedding invitations. She is very crafty, where I am not ,but I am good at copying what she shows me.
I was on scoring and gluing duty today and have made a good start but have promised to go back a day this week to do more. I would of probably just bought some ready made ones if it was down to me but to be fair they look really nice and she has had the satisfaction of knowing that she has made them herself. I'll try to take a sneaky pic next time i'm there.
It was later than our usual meal time when I got home, and, as we were going out this evening, it was a super quick supper just thrown together really. After a quick look in the fridge I decided on chicken escalopes, new potatoes and corn on the cob. I also made a small salad too. Hubby and daughter really like escalopes and they're so easy to make. 
Just pop a chicken breast into a bag or between two sheets of cling film and bash with a rolling pin to flatten slightly.

Next, in a bowl put a little flour ( any type of your choice or what you have handy) a pinch of salt and pepper, 1/2 tsp paprika and 1/2 tsp mixed herbs. You can use other herbs and spices if you prefer. I sometimes add a bit of chilli powder if I want it spicy.

Give it a stir then dip in each piece of chicken into the flour making sure it is all coated. You could dip it into beaten egg first to help it to stick if you prefer, but, I find there's really no need.
Put a very small amount of oil into a non stick pan and fry gently. Turn the chicken over a few times to cook evenly then place onto a sheet of kitchen paper to absorb any excess oil.
We sometimes have this served with rice or in pitta breads with salad. It's very versatile. Tonight we had new potatoes and sweetcorn.

  1. Cheesy egg and bacon wraps for a fast lunch.....can can chili for a quick supper with tea biscuits and shredded cheese.

  3. My quick meal is always a stir fry with chicken, veggies and rice. I usually have portions of cooked chicken in the freezer. If I'm really in a hurry I use rice noodles as they only take a few minutes to soak in boiling water

    1. We have had that tonight Ali as I got a message, late afternoon, that my daughters boyfriend would be coming for dinner. I had planned to make spaghetti bolognese but there wouldn't of been enough to go round. We will have that tomorrow now. Do you buy the ready cooked frozen chicken? x

    2. I buy frozen raw chicken breasts, defrost them, cook them and freeze them again in portions. I buy 1kg currently £5.25 at $ainsbury's which gives me 7 portions
